Wormwood
A bitter aromatic herb, legally required in vermouth and the defining botanical of absinthe.
Wormwood gives vermouth its name — from the German Wermut. Its bitterness is a structural component of both categories; the thujone content that once made absinthe scandalous is now regulated to safe levels.
