Cocktail Techniques

Batch

To pre-mix a cocktail in volume ahead of service, with dilution and chill built in.

Batching is how bars serve stirred cocktails quickly and consistently. A batched Manhattan is scaled by ratio, water is added to account for stir-dilution (typically 22–25% by volume), and the whole thing is stored cold. At home, batching Negronis in a bottle in the freezer is the highest-return trick in the book.
