Vermouth

A fortified wine flavored with botanicals including wormwood.

Vermouth is wine, not a spirit, and behaves like wine after opening: it oxidizes. A bottle left at room temperature for two months is a different product than the day it was opened. Refrigerate after opening; buy 375 ml bottles; replace within six weeks.
