Simple syrup

A solution of sugar dissolved in water — the universal cocktail sweetener.

Simple syrup is either 1:1 (equal parts by weight) or 2:1 (rich). Rich is more forgiving in balance and lasts longer refrigerated. Both are made without heat by shaking in a jar until dissolved.
