Shrub
A vinegar-based fruit syrup dating to colonial America.
A shrub is fruit macerated with sugar, cut with vinegar (cider, red-wine, balsamic), aged briefly, and strained. The acid extends the fruit's life and adds a sharp, savory dimension. Shrubs pre-date modern citrus supply chains and are the original way to make a fruit-forward drink refreshing.
