Oxidation

The chemical reaction between air and a wine or spirit that changes flavor over time.

Oxidation is why vermouth belongs in the fridge and why a decanted bourbon left half-full for a year tastes duller than it did the day it was opened. Small bottles, tight caps, and cool storage all slow it down.
