Muddle
Press herbs, fruit, or sugar in the bottom of a glass to release oils and juice.
Muddling is the mechanical version of expressing: bruise gently for aromatic herbs, crush firmly for citrus segments or sugar cubes. Over-muddling mint releases chlorophyll and turns a Mojito grassy; the trick is a few firm presses, not grinding.
