Dry Shake

Shaking a cocktail without ice before shaking again with ice.

The dry shake emulsifies proteins — egg white, aquafaba — before dilution begins. Ten to fifteen seconds of aggressive dry shaking builds the foam, then a normal ice shake chills and dilutes without collapsing it. Whiskey Sours and Ramos Gin Fizzes both depend on the technique.
